Love these with my breakfast…and they are especially great if you need a little boost before your AM workout but don’t want to eat too much. Either way, these bars are a tasty way to start your day with balanced nutrition.
Ingredients:
1 cup raw oats
2/3 cup vanilla meal shake or energizing soy protein
2 tbsp cream cheese or tofutti, softened
1/4 cup pecans, chopped
2 1/2 cups strawberries, thawed and mashed
2 tsp vanilla extract
4 tsp unsweetened coconut, shredded
1/2 cup Kashi 7 whole grain nuggets cereal
Mix oats, meal shake. Combine cream cheese/tofutti, pecans, strawberries, vanilla and coconut. Blend with dry ingredients. Add Kashi. Pour mixture on wax paper and roll into a log. Chill 30 minutes in freezer. Makes 8-10 slices. Store in freezer or fridge up to 5 days.
Note: You can roll the log itself in coconut or Kashi. YUM!
